From apple picking and chestnut roasting to pumpkin carving, backyard bonfires, and our obligatory autumn family photoshoot with matching flannel shirts, my family has checked off most of our annual fall activities. Autumn is our absolute favorite time of the year, and we already own more fall-scented candles than a Yankee Candle store; although some were gifts, I swear, and not a day goes by without one being lit in our household. So, having done all of our fall projects, I decided to try some new fall recipes with my kids. We made a dozen or so fall-flavored desserts, but these four recipes are the only ones you need to know about, and nothing will taste better than adding them to your fall camping!

Apple Pie Filling Foil Packets
Ingredients
- 1 apple (sliced)
- 1 tablespoon of butter
- 3/4 tablespoon of brown sugar
- 1/4 teaspoon ground cinnamon
- 1 heaping tablespoon of cranberries (I used whole, canned!)
- Chopped nuts (optional)
Directions (2 Steps)
- A fairly healthy twist on dessert, the apple pie foil packet is like eating pie filling. Place a sliced apple, butter, brown sugar, ground cinnamon, cranberries, and a sprinkling of chopped nuts in a sheet of aluminum foil.
- Fold the aluminum foil over the ingredients so that all ingredients are enclosed in a packet of foil. Place the packet on the grill over the campfire and let it cook for about 25 minutes (keep an eye on it, this will vary depending on how hot your fire is!), remove it from the flame and enjoy.
Apple Pie French Toast Roll Ups
This recipe was inspired by the apple pie french rolls my family tried from The Kitchen Magpie. These french toast rolls were such a hit with my little ones that the next morning they were requesting them for breakfast, which I may or may not have complied with their sugary demands. I found that a touch of freshly grated nutmeg (optional) added a gentle, warm, nutty flavor that elevated this recipe for me. You can even take this recipe a step further and substitute the white sandwich bread for some brioche, which is richer and a little pricier than your average store-bought bread but delicious and worth it—in my opinion. If you don't have syrup or want to shake it up, try adding some warm peanut butter or nutella!
Ingredients
- 12 slices white sandwich bread - square shaped is best!
- 1 can of apple pie filling (I actually used the recipe above, just cut the apples into smaller pieces and cook a little longer for super soft apples - so easy, so yummy!)
- 2 eggs
- 3 tablespoons milk
- dash of vanilla
- 1/8 cup granulated sugar
- 2 teaspoons ground cinnamon
- butter for the frying pan
Directions (12 Steps)
- Remove the crust from the bread.
- Using a rolling pin, flatten out each piece of bread.
- Spread some apple pie filling onto the bread, as much as you can fit in. (approx 2 tbsp)
- Combine the sugar with the cinnamon
- Sprinkle the sugar-cinnamon combo onto that apple pie filling
- Roll the bread up tightly and place the seam side down while you make the rest.
- Whisk the eggs, milk, and vanilla together in a shallow bowl or small pan. (Pro tip: make this ahead of time at home and store it in a small container in your cooler)
- Heat a skillet set over medium heat and melt 2 tbsp of butter.
- Take each roll and dip it into the egg mixture, coating completely.
- Place them in the pan seam side down.
- Cook until golden brown, turning them, so they brown on all sides.
- Serve plain, with syrup or any other topping your heart desires (Nutella or peanut butter, anyone?!)
Autumn S'mores Dip
I made my own pumpkin pie filling, but you can use one from a can to simplify!
Ingredients
- 1 pkg. Mini Marshmallows
- 2-3 Hershey Bars
- 1 box Honey Graham Sticks
- Pumpkin Pie filling
- Cast Iron Skillet, 6-8”
Homemade Pumpkin Pie Filling Ingredients
- Pro tip: do this at home, so it is pre-made for your camping trip!
- 1/2 cup pumpkin puree, preferably homemade
- 1 large egg + 1 large egg yolk, beaten
- 1/4 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
- 1/16 teaspoon ground cloves (literally a tiny dash)
- 1/4 teaspoon kosher salt
- 1/3 cup heavy cream
- 1/4 cup whole milk
Directions (6 Steps)
- Put a layer of marshmallows into the skillet.
- Break the candy bars into pieces and spread them around on the marshmallows.
- Dollup pumpkin pie filling around the skillet
- Sprinkle more marshmallows over the chocolate, leaving some chocolate to show.
- Place on a grate over a campfire and cook until the marshmallows melt.
- Remove from the campfire and serve with the graham sticks.
Pumpkin Spice Krispies Treats
Ingredients
- 1 ½ sticks (12 tablespoons) of salted butter, plus more for the pan
- (3 ) 10-ounce bags of marshmallows
- 18 c. crispy rice cereal
- 2 tsp. pumpkin pie spice
- 1/2 can of pumpkin puree
Directions (2 Steps)
- Butter a 9-by-13-inch baking pan and line it with parchment paper, leaving a 2-inch overhang. Melt 1/2 stick of butter in a large pot over medium heat. Add 1 bag of marshmallows and cook, stirring, until melted. Remove from the heat and stir in 6 cups of cereal until combined. Firmly press the mixture into the prepared pan and set aside.
- Melt the remaining 1 stick of butter in a clean pot over medium heat. Add the remaining 2 bags of marshmallows and cook, stirring, until melted. Stir in the pumpkin pie spice and food coloring until blended. Remove from the heat and stir in the remaining 12 cups of cereal. Firmly press the orange mixture on top of the plain mixture in the pan. Let cool completely. Use the parchment overhang to lift the treats out of the pan. Cut into squares.
