Scout Chef Kitchen Presents: Delicious Corn Chip Recipes for Camping

Happy National Corn Chip Day! In honor of this DELICIOUS day, I pulled together a few ways to eat corn chips while you are off the grid on your next camping adventure.
- Don’t reinvent the wheel. Grab a bag of Fritos and add in some ground beef, shredded lettuce, diced tomato, and shredded cheese. Boom. Tacos in a Bag! And added bonus? All you have to do to clean up is pack out your Fritos bag.
- Get your Dutch oven ready, because it is time for Corn Chip Pie. Think of this as chili with a super yummy twist. To start, you can use your own chili recipe, or try this one. Once your chili is cooked, layer Fritos in a thick layer on top, pressing them into the chili. Sprinkle shredded cheese on top and cook until the cheese is melted and starts to bubble. Serve with sliced green onions as a garnish.
- One of my favorite treats, pretty much ever is a solid batch of Classic Nachos. This is not something to be overlooked, especially as a camping meal – it is quick, super easy, and covers multiple food groups. Grab your favorite corn tortilla chips (to keep them from getting crushed, pack them in a bin on top of the rest of your food stores) and layer them with ground beef (or skip for vegetarian-friendly!), diced tomatoes, 1 diced orange bell pepper, ¼ diced purple onion, finely chopped spinach, and shredded cheese. I know that it seems odd to add the orange bell pepper and to use spinach, but trust me. Not only do they diversify the colors (eat the rainbow and all that), but they also add in some additional nutrients. Spinach is a superfood that gives you a boost of protein, iron, vitamins, and minerals! It boosts memory, focus, and helps prevent inflammation that can be harmful to the brain (thanks folate!).
- And last, but definitely not least, this Breakfast Scramble is ah-may-zing. Seriously, so good. Throw some diced (you’ll want those in small pieces) potatoes or sweet potatoes and chopped onion in a pan and sauté until they are cooked through. Pour scrambled eggs over the cooked potatoes, and when they are almost set, sprinkle over with shredded cheese. Serve the mixture over crushed up corn tortilla chips. For some additional flavor, throw in some salsa and cilantro! Spicy salsa gives it the perfect kick.
