Quick and Easy On-The-Go Snacks for Camping

 

Heading out for the weekend? The day? A couple of hours on the couch (kidding. Sort of.)? Check out these snack ideas that pack a powerful punch no matter what you are fueling up to tackle!

    • Sunbutter pancake rolls. This is my personal favorite. I have brought it up before, and I will definitely bring it up again. Keep a bag of just-add-water pancake mix in your camp kitchen cooking supplies, and you are basically all set. Just make your pancakes in the morning, but make a double batch. Take the leftovers and once they are cool, spread peanut butter (or Sunbutter if there are nut allergy concerns), roll up the pancakes and throw in Tupperware or Ziploc baggies.
    • Apples. They don’t have to be refrigerated, they are pretty hard, so they can roll around in your pack for the day, you can cut them up or eat them whole, AND any remains are completely biodegradable. Perfect. Just make sure you wash them thoroughly in advance so they are set and ready to eat!
    • DIY granola. I found this amazing recipe that is darned easy from The Paper Mama and it is a MUST HAVE on tap (both in your pack and in the pantry).

      • Ingredients:
        • 7 cups old fashioned oats
        • 1 ½ cups slivered almonds or chopped pecans
        • ½ cup shelled sunflower seeds
        • 1 ½ cups unsweetened shredded coconut
        • 3 tablespoons cinnamon
        • ¼ teaspoon nutmeg
        • 1/8 teaspoon ground ginger
        • 3 tablespoons pure vanilla extract
        • 1 ½ cups no sugar added applesauce
        • ¼ cup honey

      • Cook Instructions:
        • Preheat oven to 275°
        • Combine all dry ingredients
        • In a separate bowl, combine all wet ingredients
        • Add the wet to the dry and toss until well-coated
        • Spread mixture evenly on rimmed baking sheets (about ½ inch thick)
        • Bake for 40-50 minutes, tossing every 10 minutes
        • Remove and allow to cool completely
        • Store in sealable container
    • Trail Mix (duh). Do this the easy way (just buy a bag), or complicate it a bit and mix your own (obviously my preferred method). I love to combine salted sunflower seeds, roasted and unsalted almonds, shelled pistachios, some of the granola that you cooked from scratch using the recipe above, raisins, roasted and salted cashews, and walnuts (good for the brain!).
    • Dried Fruit Mix. I am extremely partial to dried apricots and dried mango, but raisins are a great classic to have on hand, along with banana chips!
    • RX Bars or Lara Bars. I love these two brands because they are clean and have less sugar than others (no added refined sugars).
    • Jerky. Grab a bag and keep it in your pack – this is one of the easier snacks to keep on hand, as it is available pretty much anywhere, from gas station to high-end grocery stores.
